Asparagus-Pesto Pasta with Lima beans
Ingredients
8ounces pasta shapes
8ounces(1/2can) lima beans
1pound asparagus(cut into 1inch pieces)
3tbsps pesto sauce
2/3cup light cream or half and half
Salt to taste
Freshly ground black pepper
Fresh nutmeg powder
3tbsps olive oil
Grated parmesan cheese to garnish
Fresh basil to garnish
Method
Boil the pasta until al dente.
While the pasta is cooking,heat oil in a pan and add the aspargus and cook it.
Add the lima beans,cream and pesto to it stirring continuously.
Once the pasta is done,drain it leaving a little water in it.
Sprinkle some nutmeg and mix it well.
Toss the pasta into the sauce and mix well.
Remove from heat and garnish with cheese and basil.
Serve it hot immediately.
