Baby Corn Masala

Ingredients
Baby corn 15nos
Onion (big) 1
Tomato puree 1/2cup
Dhaniya powder 1tsp
Jeera powder 1/2tsp
Chilli powder 1tsp
Garam masala 2tsps
Ginger garlic paste 1tbsp
Mint leaves 5-6nos
Cilantro(chopped) for garnish
Cashews 10nos
Salt to taste
Oil 3tbsps

Method
Grind the cashews into a paste and keep aside.
Chop the mint leaves.
Pressure cook the baby corn if they are fresh .
If they are canned do not cook them.

Heat 1tbsp oil in a pan and add the cut onions and fry them until brown.
Grind the fried onion into a paste.
In the same pan heat the remaining oil and add the onion paste,mint and ginger garlic paste.
Fry for a minute and add the tomato puree to it and fry for 4mins.
Add dhaniya powder,jeera powder,chilli powder,garam masala,and salt.
Mix well and fry for 2mins.
Add the baby corn to the mixture and mix.
Pour 3/4cup water and cook it for 3mins.
Add the cashew paste and mix well.cover it and cook it for another 2mins.
When you got the required consistency of the gravy, remove from heat.
Garnish with chopped cilantro and serve with roti.
