Basil Thyme Potatoes

Ingredients
1 lb. baby potatoes, washed
1 – 2 flakes garlic, chopped
3 – 4 sprigs fresh basil, chopped
1 – 2 tsp. dried thyme
1 – 2 tsp. balsamic vinegar
crushed black pepper to taste
crushed red pepper to taste
salt to taste
olive oil; ground cumin seeds

METHOD:
Do not peel the potatoes and halve the large ones only.
Make a marinade of all the ingredients and toss the potatoes in it. Coat well.
Cover and leave it for 1 – 2 hours.
Place the potatoes in an oven safe dish and cover with foil.
Cook/bake in a preheated oven at 300 degrees F for 55 minutes or until tender.
Serve hot.
