Bean Burrito

Ingredients
14oz can of red kidney beans
14oz can of pinto beans
2 green chillies
1 onion,finely chopped
2 garlic cloves
1/2 cup lettuce,shredded
1 red onion,chopped
2 green chillies
1tsp sugar
1 tomato,chopped
3/4cup vegetable stock
1/3cup grated cheddar cheese
salt and pepper to taste

Method
Heat oil in a large pan and saute' onions for 3mins.Add garlic and chilli and cook for a minute.
Mash the beans and add it to the pan.
Add the vegetable stock and sugar and cook it for 5mins.Keep stirring.
When it is soft and thick add the cilantro to it and remove from heat.
Place the tortillas in a baking tray and warm it in a oven for about 1-2 minutes.
Spoon the bean filling along the centre of the tortilla leaving an inch on both sides.
Add the chopped onions,tomato,lettuce and grated cheese on the top.
Fold the ends inside and roll it as a burrito and serve.

To spice it up a little taco sauce can be added.
