Basil Eggplant

Ingredients
Chinese eggplants 3nos
Garlic cloves 3nos(chopped)
Soy sauce 3tbsps
Sugar 1 and 1/2tbsps
Basil 1bunch
Vegetable oil 2tbsps
Chilli peppers 3nos
or
Crushed red pepper 1tsp
Ginger 1/2tsp

Method
Cut the eggplants into big pieces.Slice the chilli peppers.
Heat oil in a pan and add garlic,ginger and chilli peppers.Fry for a minute.
Add the eggplant pieces and mix well.
Add the soy sauce,sugar and 1/2cup of water to it.Mix well and cover.
When the eggplant is cooked and and all the liquid is evaporated add the basil leaves to it.
Stir for a minute and remove from heat.
Serve it hot.
