Brinjal and Tomato Chutney

Ingredients
Eggplant(american) 1nos (or big size indian eggplant(brinjal) 4nos)
Tomatoes 4nos
Green chillies 6 to 8nos
Tamarind pulp 1tbsp
Turmeric 1/4tsp
Salt to taste
Cilantro 1/2bunch

Seasoning
Urad dal 1tsp
Mustard seeds tsp
Hing 1/4tsp
Oil 2tbsps

Method
Heat oil in pan and add all the seasoning ingredients to it.

When the mustard seeds start to pop add the diced eggplant and tomato pieces to it.

add turmeric,salt,green chillies and tamarind pulp to it(instead of pulp ,u can also add a little bit of tamarind as it is).

Mix it well and cover it for 5 to 8 mins.

Uncover and mix it.If it is a little bit watery ,leave on heat without covering the pan for 2 to 3 mins.

Remove from heat and let it cool. Grind the mixture along with cilantro.

This can be eaten with rice or can be used as a spread for sandwiches to spice them up.
