Eggplant in cilantro
Ingredients
Indian eggplants 6 nos
Cilantro 2bunches
Green chillies 6 nos (To taste)
Salt to taste
Oil 4Tbsps
Mustard seeds 1 tsp
Turmeric 1/4 tsp
Method
Grind cilantro,green chillies into a paste.
Cut each eggplant into 4 pieces.
Heat oil in a pan.Add mustard seeds.
When they splatter, add the eggplant pieces and fry them for a minute.
Add the cilantro paste to it.
Add salt and turmeric.Mix it well and cover it till the eggplant is cooked.
Serve it with rice.
P.S.-You can sprinkle a couple of drops of lemon juice before serving to give it a tangy finish.
This serves 4 people.
