Eggplant in Garlic Sauce
Ingredients
Chinese eggplants 4nos
Ginger(finely grated) 1tsp
Garlic(grated) 1tsp
Soy sauce 2tbsps
Chilli sauce 1tbsp
Vinegar 1tsp
Green onions 1/2cup(chopped)
Sugar 1tbsp
Cornstarch 2tbsps
Oil 4tbsps
Method
Cut the eggplants about 2inchs long pieces.
Heat 3tbsps oil in a pan and fry the eggplant pieces until they are light brown and keep them aside.
Heat the remaining oil and fry ginger and garlic in it.
Add the chopped green onions to it.Fry for a minute.
Add the soy sauce,chilli sauce,sugar and vinegar to it.Mix well.
Add 1cup water and bring it to a boil.
Mix cornstarch with little cold water and add it to the boiling mixture.Mix well.
When the sauce is thickened remove from heat and pour over the eggplant pieces.
Garnish with some chopped green onions and serve.
