Vegetable Fried Noodles

Ingredients
Fresh noodles 1pound
Garlic(minced) 1tbsps
Bean sprouts 1cup
Tofu(firm) 1pound
Bok choy 1pound
Carrots(cut into strips) 1/2cup
Beans(cut into strips) 1/2cup
Soy sauce (light) 3tbsps
Brown sugar 1tbsp
Ginger(grated) 1tbsp
Vegetable broth 1cup
Chilli sauce 1tbsp
Cornstarch 1tbsp
Oil 3tbsps

Method
Cut tofu into 1inch cubes and fry them.
Put the noodles in boiling water for 2mins.Drain them well.
Heat a non-stick skillet with 1tbsps oil and spread the noodles in it(you can do it in 2 batches).
Pour 1/4 cup vegetable broth.Cook on a low flame.
When the broth has evaporated and the bottom of the noodles is brown,flip it over.
When both sides are brown slide it on to a plate and keep aside.
Heat oil in a pan and add the garlic and ginger.
Add cut bok choy,carrots,beans and fry for 2minutes.
Add the soy sauce,chilli sauce,brown sugar and mix well.
Add the tofu pieces to it .
Mix cornstarch in little cold water(2tbsps) and add to the vegetables.
When the sauce thickens,remove it from heat and pour it over the fried noodles.
Serve it hot.
