Mixed Vegetable Kurma

Ingredients
Cauliflower florets 1/2cup
Carrots(diced) 1/4cup
Beans(diced) 1/4cup
Potato 1(big,diced)
Peas 1/4cup
Ginger-garlic paste 1tbsps
Onion(chopped) 3/4cup
Tomatoes 2(chopped)
Green chillies(sliced) 4
Goriander/dhaniya powder 1tsp
Turmeric powder 1tsp
Chilli powder 1/2tsp
Cloves 3nos
Cinnamon 1inch stick
Elaichi/cardammom 2
Coconut(fresh) 1/2(small)
Saunf(anise seeds) 1tsp
Roasted chana dal 1tbsps
Salt to taste
Oil 3-4tbsps
Method
To prepare coconut milk:
Grind coconut,sonph,roasted chana dal with 1cup water and strain it by taking out the pulp.
Keep the coconut milk aside.
Heat oil in a pan and add cloves,cinnamon,cardammom to it.
Fry for a minute and add onions,ginger-garlic paste,green chillies.
Fry until the onions turn transparent.
Add chopped tomatoes and fry for 2mins.
Add all the vegetables,coriander powder,coconut milk,turmeric,salt.
Mix well and cover.Add water as needed.
When the vegetables become tender,garnish with chopped cilantro.
Serve with rice or roti.
