Mysore Bajji (Tempura/Pakora)

Ingredients
All purpose flour(maida) 2cups
Onions 1 cup chopped(More the merrier)
Cilantro(coriander) 1/2cup chopped
Green chillies 4 chopped
Salt to taste
Baking soda 1/4th tsp
Sour curd 1 1/2 cup
Oil for deep frying

Method
Mix all the ingredients in a bowl. Add a little water if needed.

Heat oil. When it is hot , take a spoonful of batter and drop into the oil. Heat should be on medium.

When it is light brown in color,remove them and place them on a paper towel so that you drain the excess oil.

Serve hot with mint chutney.

Bajji also known as Pakora is a type of Indian cuisine created by taking ingredients such as onion, eggplant, lentils, potato, spinach, cauliflower, tomato, and chilli, dipping them in a batter of gram flour (all purpose flour) and then deep-frying them. They are usually served as snacks or appetizers. This belongs to the asian Tempura Family. Mysore Bajji is very unique to Southern India and is served in almost all southern restaurants across India.
