Sarson Ka Saag
Ingredients
Sarson(mustard greens) 1 bunch
Broccoli 2 bunches (optional)
Spinach 1 big bunch
Salt to taste
Ginger 2tbsps grated
Oil 4tbsps
Green chillies 2nos
Chilli powder 2tsps
Wheat flour 4tbsps
Sugar 1tbsp
Method
Pressure cook mustard greens ,spinach and brocoli .
Then grind them into a with hand mixer(do not make it too soft).
Put the mixture on medium heat and add 4tbsps of wheat flour .Mix it well.
Add 1tbsps of sugar to it and mix .
Keep mixing it so that they r no lumps.
When the flour seems to have mixed well just wait for 5mins and remove it from heat.
Heat oil in a pan and add the grated ginger and chilli powder to it .
Add this to the greens mixture .Mix well.
Serve it hot with rotis or naan.
History
`PASSION OF PUNJAB' ON A PLATTER. Saag means greens; sarson da saag specifically means mustard greens, and palak da saag is spinach. This flavorful side dish often accompanies hearty whole-wheat griddle breads in Punjab, the wheat-growing capital of India. The people of Punjab prefer rotis or chapatis than rice. In fact their staple food is Makke(Corn) De Roti and Sarson Da Saag. They can have rotis or chapatis with just onions only, if they do not have a curry or vegetable along with it. Another interesting feature is lassi which is a preparation of curd and is quite common among the people of Punjab. They must have a glass of lassi, at least once a day, particularly after breakfast or lunch.
