Spinach-Feta Pies
This is an adaption from a recipe in a cook book.
Ingredients
1cup fresh spinach
2 scallions,chopped
3/4cup feta cheese
1 egg,beaten
1tbsp fresh dill,chopped
freshly ground pepper
olive oil,for brushing
8 small sheets of filo pastry
Method
Preheat the oven to 375degreesF.
Blanch the spinach in very little water until wilted.
Squeeze out the excess amount of water and chop it.
Mix the spinach with the onions,egg,dill and ground pepper.
Add the feta cheese and mix well.
Spoon a little mixture on the filo sheet at one end and roll it.
Shape it into a cresent shape.Brush the roll with little oil.
Repeat the same with the other sheets.
Bake the sheets in the oven for about 20-25mins until golden and crisp.
Cool and serve.
