Spinach-Ricotta Ravioli

Ingredients
Wanton wraps 24nos
Spinach 2cups
Ricotta cheese 2cups
Parmesan cheese 1/2cup
Salt to taste
Freshly ground black pepper

Method
Cook the spinach in a saucepan until the leaves have wilted.Press out the excess liquid from it.
Chop up the spinach.
Mix spinach,ricotta cheese,parmesan cheese,salt and pepper together in a bowl.
Lay out the wanton wrap and spoon the mixture in the centre.
Brush the edges with little water and place another wanton wrap on top of it and press the edges together.
Repeat the process for the rest of the wraps.
Cook the ravioli in plenty of boiling salted water for about 3mins. Take them out with a strainer.
Drizzle the ravioli with a little olive oil and grated parmesan cheese.
Garnish with chopped parsely and serve.
