Vegetable Fried Rice(indian)
Ingredients
Basmati rice 2cups
Black cardamom 2nos
Cloves 5nos
Cinnamon 3(1 inch)sticks
Bay leaf 2nos
Mint leaves 1/4cup
Cilantro 1/2bunch
Ginger 1 and 1/2inch piece(grated)
Garlic 4cloves(grated)
Beans(chopped) 1/2 cup
Carrot(grated) 1/2cup
Tomato(small) 1nos(cut into small pieces)
Onions 1/2cup(cut lengthwise)
Green chillies 4nos(cut lengthwise)
Oil 1/4cup
Salt to taste
Method
Wash the rice and keep it aside.Cut the mint and cilantro.
Heat oil in pan and add bay leaf,cardamom,cloves and cinnamon.add onions and green chillies and fry for a minute.
Add the ginger, garlic,mint and cilantro.fry till onions are transparent.
Add the carrot,beans,tomato and fry for 2minutes.
Add the rice and salt and mix well.
Fry for a minute and add water.
Transfer everything to a rice to a rice cooker and cook it.
Once it is done mix it well and serve it.
