Vegetable-filled Ravioli

Ingredients
All purpose flour 1and 1/2cups
Salt 1/2tsp
Olive oil 1tbsps
Eggs 2nos(beaten)

For the filling
Leeks 1nos(small)
Carrot(coarsely grated) 1nos
Red onion 1(finely chopped)
Green bell pepper 1(chopped)
Ricotta cheese 1/2cup
Grated parmesan 2tbsps
Basil(chopped) 1tbsp
Salt and pepper to taste
Olive oil to serve

Method
Dough: Mix all the ingredients into a ball of dough using a food processor or by hand.
Let it rest for about an hour.

Heat oil in a pan and fry leaks,onion,carrots,peppers for 5mins.
Remove from heat and allow it to cool.
Mix with the cheeses,chopped basil,salt and pepper.

Divide the dough into 2 portions and roll them out into large thin rectangle.
Place small portions of the filling in a row about 2inches apart.
Brush in between with water and place the other pasta sheet on top of this.
Press down well in between the fillings and then cut them into squares.
If the edges open gently press them down with your fingers.
Boil the ravioli in lightly salted water for 5mins.
Toss the cooked ravioli in a little olive oil.
Garnish it with extra cheese and serve.
